Andes mint cookies for cookie swap


    monday is our annual cookie swap, this year Jessica is hosting , it should be lots of fun.. this is the recepie i made , i am really not a baker and i didnt want to make more than one batch to make 9 dozen so i found this great one on batch make 10 i even have extra for the boys .. they really enjoyed helping make and papi even made his chocolate chip cookis for the boys way tomuch for me..

    so if anyone want a good and easy easy ( if i can make it it is easy) try this one..





  • ¾ c. butter (1½ stick)


  • 1½ cup brown sugar



  • 2 Tablespoons water


  • 12 oz. (2 cups) chocolate chips (I do 1 cup bittersweet, 1 cup semi)


  • 2 eggs


  • 2 ½ cups flour


  • 1 ½ teaspoon baking soda


  • ½ teaspoon salt





In sauce pan over low heat, melt together the butter, add brown sugar, water and chocolate chips. sti,then cool for 5 minutes. and eggs and dry ingredients;mix with a mixer on low speed until blended. chill 1 hour.make into little balls i mean small balls and bake on an ungreased cookie sheet at 350 degrees for 10-13 minutes. while still hot,put Andes candy mint on each cookie, let it get soft then swirl mint with spoon. Cool on baking rack.
